Summer on a Sheet Pan

This recipe can be customized with your favorite fresh summer veggies. Asparagus is out now and that's why we did it this way! Just a few ingredients, just a few minutes and only 1 pan to wash!

Ingredients
2 large sweet potatoes, peeled and cubed
Bunch of Asparagus, with woody part snapped off
1 sweet onion sliced
2-3 TBS extra-virgin olive oil
1-2 teaspoons seasoning of choice (depending on the veggies, use basil or Greek seasoning whatever your preference)
16 oz. smoked (or any pre-cooked) sausage cut into 1-inch slices 

Instructions

1.      Preheat your oven to 425 degrees
2.      Add the cubed sweet potatoes and onion to the sheet pan
3.      Drizzle with the olive oil and add seasoning on top
4.      Toss to coat and spread everything out evenly
5.      Roast for 20 minutes
6.      Remove, add asparagus, stir, spread it all back out
7.      Roast for another 15 minutes
8.      Remove, stir and spread it all back out
9.      Add the sliced sausage to the sheet pan
10.  Roast for another 10 minutes, until sausage has browned
