Easter Sugar Cookie Bars

For the Bars:
1 cup butter, softened
1 cup granulated sugar
1 large egg
1 ½ tsp vanilla extract
2 ½ cups all-purpose flour
½ tsp baking powder
½ tsp salt

For the Frosting:
2 cups powdered sugar
¼ cup butter, softened
2 TBS milk
½ tsp vanilla extract
Food coloring (pastel pink, blue, or any spring colors)

For Decoration:
Pastel-colored sprinkles

Instructions:
Preheat your oven to 350°
Line a 9×13-inch baking pan with parchment paper to prevent sticking and allow for easy removal.
In a large mixing bowl, beat the softened butter and sugar until light and fluffy. Add in the egg and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
Press the dough evenly into the prepared baking pan. Bake for 18-22 minutes or until the edges turn lightly golden. Let it cool completely before adding the frosting.

Prepare the Frosting
In a mixing bowl, beat powdered sugar, softened butter, milk, and vanilla extract until smooth. Divide the frosting into separate bowls and tint each with pastel food coloring.

Decorate with Easter Flair
Spread the frosting evenly over the cooled sugar cookie bars.
Use alternating colors for a festive appearance. Sprinkle pastel-colored dots, etc.
